Balsamic vinegar is a specialty of the province of Modena, Italy. Traditionally it was the almost exclusive heritage of a very few families who cultivated this gourmet passion in their own houses with the ageing process taking place in dry, dark and well ventilated attics. Now, however, it is a large scale business and a 'Consortium of Balsamic Vinegar with Denomination of Controlled Origin' (D.O.C.) has been formed.
The range at Sabato is primarily from the Giusti family who have been producing balsamic vinegar since 1598 and are the oldest producers in Modena. The Giusti maxim has always been the same; the principle of natural quality, based on the selection of choicest grapes, the traditional seasoning in the old barrels and the careful process which gives the vinegar its particular flavour.
