Chicken Thighs with Sesame Seeds and Paprika

Serves 4

4 - 8 Mahy Farms chicken thighs
Sea salt and freshly ground black pepper
2/3 cup Girolomoni organic '00' flour
1 cup sesame seeds
2 tsp La Chinata sweet smoked paprika
1 egg, lightly beaten
extra virgin olive oil  (EVO)

Preheat the oven to 180ºC.

Rub the chicken with salt and pepper. Combine the flour, sesame seeds and paprika in a plastic bag. Place the chicken thighs a few at a time in the egg and then into the bag. Shake until the chicken is coated then repeat with the remaining pieces.

Heat the EVO in a hot pan and brown the chicken pieces on both sides then transfer to an oven tray and bake for about 20 minutes or until cooked.
