Vanilla Christmas Cookies

Makes about 36 cookies

125g Lewis Road Creamery butter , softened
4 tsp Heilala vanilla sugar
3 Tbsp J. Friend & Co honey
1 cup Girolomoni flour
½ tsp Iblea sea salt
1 Tbsp Heilala organic vanilla extract
1 cup nuts, chopped (eg. walnuts , roasted Marcona almonds , roasted hazelnuts )
¾ cup icing sugar

Preheat oven to 150°C. Grease two oven trays.

Cream butter and half of the vanilla sugar, beat in honey, gradually mix in flour and salt, then vanilla extract. Add nuts and mix. Wrap the dough in glad wrap and refrigerate for one hour.

Form into balls, about the size of a 20 cent piece. Place two inches apart on oven trays and bake 35-40 minutes.

Remove from oven. Combine icing sugar and remaining vanilla sugar. As soon as the cookies are cool enough to touch, roll in the icing sugar and vanilla sugar mixture. Allow to cool then roll in mixture again to coat.
