Apple Syrup Cake

250g Lewis Road Creamery unsalted butter
1 ½ cups sugar
1 apple, grated
2 free-range eggs
2 cups flour
1 ½ tsp baking soda
1 ½ tsp baking powder
¾ cup Lewis Road Creamery milk

For the topping:
¾ cup Stams tart apple syrup
¼ cup sugar

Preheat the oven to 180°C. Lightly grease and flour a 23cm cake tin.

Beat the butter and sugar until creamed. Mix in the grated apple and eggs. Sift flour, baking soda and baking powder into the creamed mixture, then blend in the milk.

Bake in a preheated oven for 40– 45mins.

While the cake is baking make the syrup. Gently warm the apple syrup in a heavy saucepan. Stir in the sugar until dissolved. Leave to cool.

Remove the cake from the oven and pour the syrup over the hot cake. Leave in the tin to cool and dust with sugar if desired.
