El Serpis olives are produced by the company Candido Miro, S.A. which was founded in 1926 by Signor Candido Miro, an ardent fan of his own product.
Sitting in his favourite bar in Alcoy, which, as is usual in Spain, offered a selection of tapas he missed the presence of the stuffed olives, which were a house specialty. On asking the proprietor he was told that making them was too much work for the kitchen and they had decided to stop doing them. Not wanting to do without and being of an enterprising nature, Signor Miro decided to make them himself.
This was 73 years ago and now this family owned company is in its third generation and is the market leader in Spain. The philosophy of the company is do one thing and do it as well as you can.
They use a specific cultivar of Manzanilla olives which grow in a particular location in Seville. According to the company, ‘if you take one tree and plant it in another place, the fruit will be different.’ This particular cultivar of the Manzanilla olive are as round as a small apple, the texture of the fruit is not too soft or firm, the size of the stone and the fat level is low.
