Zucchini, Corn & Emmental Fritters
Makes 25 cocktail fritters or 12-15 larger fritters
3 medium zucchini, grated and squeezed as dry as possible in a clean tea towel
2 cobs sweetcorn, chargrilled, cooled and kernels removed
2 cloves garlic, crushed
50g , grated
1 tsp sea salt
½ tsp freshly ground black pepper
¼ cup self-raising flour
100g cheese, cut into cubes
1 cup fresh herbs of your choice, chopped (coriander, mint, basil, parsley and/or chives)
4 free-range eggs, lightly beaten
(EVO), for frying
In a large bowl combine all ingredients except the eggs and EVO. Stir in the beaten eggs.
Heat enough EVO to cover the base of a large frying pan. Drop spoonsful of the mixture into the hot oil and fry over a medium heat until lightly golden on each side and cooked through.
Serve with, and fresh lemon wedges.
