What's your favourite drink? Homemade cider from my home town back in Germany.

What's the best thing about NZ food? The local produce is very good.

If you could cook a meal for anyone, who would it be and what would you cook? I would prepare possum for Anthony Bourdain!

If you weren't a chef what would you be doing? Something in the outdoors, but food and wine could be involved too.

Favourite tool of the trade? I'm a chef so my knife.

What's your favourite seasonal produce? With every season I have my favourite produce, but here in NZ for me it has to be feijoa or Bluff oysters. These are only two of many others!
