Hayden McMillanWhat are your favourite Sabato ingredients and why? Romulo sherry vinegar  for seasoning vinaigrettes, sauces and purees. It just adds that depth of flavour to the dish. Maldon Sea Salt for everything!! And of course Valrhona chocolate.

What's your favourite thing to cook when you're at home? Prawn and sweet corn Risotto (must be Ferron ). What makes this a successful kitchen and you a successful chef? We love what we do, we are passionate about cooking and we have fun. Having fun is one of the most important things to do.

Best advice for someone wanting to get into a kitchen? Pick the best restaurant you know and do anything you can to get into that kitchen. Don't worry about the money, that will come. Be like a sponge and absorb all you can. Again pick the right place

What's your guilty pleasure, food-wise? KFC - potato and gravy with chicken salt fries.

Sweet or savoury? Savoury.

Where have you travelled that has inspired you the most? Melbourne - great inspiration.

Favourite style of international cuisine? Japanese.

Favourite destination to dine? In Auckland - Kens Yakitori and Cocoro.

Three words that sums up your cooking style? Clean, seasonal, fun.

What's your ultimate comfort food? BBQ in the summer. Chicken and Shitake broth in winter.

What's your favourite drink? Champagne.

How has your cooking style evolved over the years? I'm too young to know.

What's the best thing about NZ food? I grew up on fresh seafood, cockles, pipis, and mussels. We have such a diversity of produce here and are discovering new things all the time. It's awesome.

If you could cook a meal for anyone, who would it be and what would you cook? Ferran Adria - I would cook him this bubblegum dessert. A concept I have been dreaming about. If you weren't a chef what would you be doing? An All Black. What's your signature dish? Braised Oxtail, North Island baby paua, swede, karengo, radish and miso.

Favourite tool of the trade? It's a toss between the water bath, vacuum packer and the espuma gun.

What's your favourite seasonal produce? Summer - has to be berries and tomatoes.
