Chicken Thighs with Sesame Seeds & Paprika

Serves 4

4-8 Mahy Farms chicken thighs
Sea salt and freshly ground black pepper
2/3 cup Girolomoni organic '00' flour
1 cup sesame seeds
2 tsp La Chinata sweet smoked paprika
1 egg, lightly beaten
Extra virgin olive oil  (EVO)

Preheat the oven to 180ºC.

Rub the chicken with salt and pepper. Combine the flour, sesame seeds and paprika in a plastic bag. Pour the beaten egg into a shallow dish. Coat the chicken thighs, a few at a time, in the beaten egg before placing them into the bag with the flour mixture. Hold the bag closed and shake until the chicken is coated then repeat with the remaining pieces.

Heat the EVO in a hot pan and brown the chicken pieces on both sides before transferring to a tray and baking in the oven for about 20 minutes or until cooked.

Serve with our Farro, Roast Pumpkin and Chorizo Salad or a simple green salad.
