Christmas Chocolate Truffles

makes 25 - 30 

250g dried figs, chopped
120g dark Valrhona chocolate, grated
120g raw Marcona almonds,  ground
4 Tbsp icing sugar
4 tsp brandy (or other spirit)
4 tsp lemon juice
1 large egg white
Valrhona Ivoire fèves , melted 
Fresh As freeze dried raspberry , to decorate


Mix together all ingredients, except the Ivoire, and roll into balls.

Decorate with melted Ivoire chocolate and a freeze dried raspberry on top to look like mini Christmas puddings.
