Farmhouse cheddar-style cheese with a crumbly texture and a natural edible rind, which has been rubbed with clarified butter during maturation.
Biddy Fraser-Davies has become a New Zealand cheese icon. Since being given a cow at the age of 65 and deciding to test out her cheese-making skills, Biddy has fought to become one of the only producers of raw milk cheese in the country. Biddy carefully tends to her cows Patsy, Dizzy, Lilly and Isobel, and if you visit us in-store we will even be able to tell you which of her cows has kindly provided us the raw materials for the current batch!
