The Flamigni setup fulfills all romantic notions borne of the taste of their confectionary - a row of giant gleaming copper lined bowls (apparently the mixing of the nougat takes about six hours) behind a line of marble topped tables with rather large rolling pins stashed underneath. The nougat is made once a year after the almond season, by a group of artisans employed each year specifically for their nougat making expertise (recognised by the Italian government who support them for a significant part of the year). The definite ‘made-by-hand’ element of Flamigni lends a charm to their already stunning quality confectionary.
