Gnocchi with Tuna, Vegetables & Rocket

Serves 2

1 packet Sabato gluten-free gnocchi    
160g jar Callipo yellowfin tuna in seawater    
1/3 cup El Navarrico sliced pimientos
Small handful rocket
1 Tbsp Pinoli pinenuts, toasted
Splash of Giusti white balsamic vinegar    
Sea salt and freshly ground black pepper
Pecorino Romano , shavings (to garnish)

Bring a saucepan of salted water to the boil. 

Cook the gnocchi for 2-3 minutes in the boiling water until the gnocchi floats to the top.

Drain and add the other ingredients to the gnocchi.

Toss together with a splash of the Giusti white grape must vinegar. Season and garnish with pecorino shavings.
