Made from husk-ripened maize with a coarse ground which gives a higher yield. Requires a long, slow cooking time. A great alternative to pasta, rice or potatoes. Infuse with herbs and finish with Parmigiano Reggiano for a creamy and indulgent dish. Serve with roasted duck, a rich ragu, hearty stews or osso bucco.
