Originating in America, French Coco Beans are small pea-sized white beans. These beans were introduced in France where they quickly became a favorite replacing turnips and other root vegetables in casseroles such as cassoulet.

To cook, soak the beans in cold water (at room temperature) for 12-16  hours. Drain and rinse the beans. Bring to a boil, then lower the heat, cover, and let gently simmer for 1- 2 hours, until the beans are tender.
