Founded in 1913 by Giacinto Callipo, Callipo Conserve Alimentari SpA is managed today by the fourth generation of the family and its ‘quality first’ ethos is has remained to this day. Based in Calabria, they are ISO 9002 certified and were the first company in Italy to receive the Customs Reliability Certificate. Their products are dolphin friendly. Processed soon after the catch, their premium Mediterranean tuna is deliciously fleshy and tender. Light pink in colour, it has lean flesh and comes packed in either olive oil or a lightly salted brine.

2 Tbsp Pons capers in brine, drained and roughly chopped
1 Tbsp chopped Sabato Julie Le Clerc preserved lemons, rind only
Freshly ground black pepper
1 large free range egg, lightly beaten
