These artichokes from Navarra are partially cooked before the leaves are removed and the hearts trimmed by hand. They are cut into quarters, then marinated in sunflower oil, white wine vinegar, parsley and basil.

The marinated artichokes have a tender texture and a nutty and citrusy flavour mellowed by the oil and the herbs.

Serve as part of an antipasto spread, add to salads, pasta or rice dishes.

Conservas El Navarrico is a second generation, family-run company from the Navarra region of Northern Spain. The mild Mediterranean climate and the two rivers that run through the area of San Adrián, create the ideal environment to grow some of Spain’s most prized vegetables, including piquillo pimiento (peppers).
