Tiramisu con sapori di Spagna

Serves 6

1½ cups pitted prunes
½ cup water
100g lady fingers
200ml Pedro Ximénez sherry
½ cup Valrhona dark chocolate chopped
3 free-range egg yolks
½ cup caster sugar
250g Zany Zeus Mascarpone
300ml cream, whipped
Valrhona cocoa  for dusting

Place the prunes and water in a saucepan and bring to the boil. Remove from the heat and cool completely.

Break the lady fingers up into bite sized pieces and place them in an even layer in the bottom of a wide shallow bowl.   Sprinkle the prunes and sherry evenly on top. Sprinkle the chocolate on top of that.

Beat the egg yolks and sugar together until pale, fluffy and thick. Fold in the mascarpone and cream. Spread this mixture evenly over the prunes and chocolate. Cover and place in the fridge for 1 hour.

Dust the top of the tiramisu with an even dusting of cocoa and serve.
