Rustichella Penne with Polpette & Capers

Serves 4

1 packet Salumeria sausages
Extra virgin olive oil (EVO)   
350g Rustichella penne    
½ jar Sabato organic pasta sauce with rocket    
2 Tbsp Romulo capers in brine , rinsed
Parmigiano Reggiano , grated
Sea salt and freshly ground black pepper 


Carefully slit sausage casings and remove. Pinch sausage meat to form small meatballs.  Fry in a little EVO until golden.

Cook pasta in plenty of salted water as per instructions on packet. When the pasta is cooked and drained, return to pot and add pasta sauce, capers and sausages to heat through. Check seasoning and serve topped with Parmigiano to taste.
