Shaved Brussels Sprouts, Rocket & Roasted Hazelnut Salad

SHAVED BRUSSELS SPROUTS, ROCKET AND ROASTED HAZELNUT SALAD

Serves 6-8

400g fresh brussels sprouts
3 big handfuls wild rocket
½ cup roasted hazelnuts , roughly chopped
Pons green extra virgin olive oil
Forvm Chardonnay vinegar
Sea salt and ground black pepper

Holding the sprouts by the stem end, slice very finely on a V slicer or use a very sharp knife. Bundle up the rocket and chop thinly.

Combine the brussels sprouts, rocket and hazelnuts in a large bowl. Drizzle over oil and vinegar along with sea salt and pepper. Gently toss everything together and serve immediately.
