Description

From the Roca family in Penedès, northern Spain, a fruity, mellow and rich vinegar with an appealing ‘agridulce’ character.

Fantastic paired with Colonna lemon olive oil.

Spanish law now requires that Forvm Chardonnay vinegar is labelled as 'Balsamic Vinegar'. Forvm's new packaging reflects this requirement, though the product itself has not changed.

Cellers Avgvstvs Forvm vineyards are located south of Barcelona and north of Tarragona by the sea. They were originally intended to be a small winery with Chardonnay the first variety sown, in 1983. Forvm vinegar came about ten years later, almost by accident. A batch of wine was barrelled and forgotten in a corner of the winery. With friends over for dinner, it was suggested by a chef that they produce vinegar as well as wine. They remembered the forgotten barrels and opened one to find the wine had turned into vinegar. A very good vinegar. They started producing a few bottles for friends and eventually expanded and the Forvm vinegar range was born.

They make four vinegars: Chardonnay, Cabernet Sauvignon, Merlot and the very-aged Flavius. The company is an extremely boutique producer of both wine and vinegar. Their clientele is comprised of Spain’s – and indeed the world’s – finest chefs and sommeliers.
