Chef Interview: Elliot Warne / Hammerheads

What are your favourite Sabato ingredients? Mas Portell sweet white garlic,  Ferron rice and Valrhona white chocolate because they never fail.

What's your favourite thing to cook at home? Seafood driven pastas with plenty of garlic lemon zest and parsley.

What makes Hammerheads a successful kitchen? I am only as good as the team behind me, and they are very good.

Best advice for someone wanting to be a chef? Think again.

Where have you travelled that's inspired you most? Italy. I travelled through and was impressed by the simple flavours and ingredients that tasted amazing.

Whats your ultimate comfort food? Chardonnay. Favourite drink? Chardonnay.

How has your cooking style evolved over the years? Instead of pretending to know what I am talking about, I actually do now. What's the best thing about NZ food? The great selection of natural ingredients accross the country.

if you could cook a meal for anyone, who would it be and why? Sid Sahrawat, because of those bedroom eyes x

If you weren't a chef what would you be? A comedian.

Favourite tool of the trade? Microplane grater.

Favourite seasonal produce? Jerusalem artichokes.
