Spanish sherry vinegar is an essential ingredient in our kitchen, we love how it adds a uniquely complex flavour, with hidden depths and a clean brightness. Sherry vinegar has a rich history spanning many centuries, and a bottle or two in your pantry will elevate your salad dressings, marinades, soups, casseroles, pickling, and sauces – and is one of the best ways to de-glaze your pan too.
For Sabato, we have chosen a traditional Pons sherry vinegar from Jerez, Andalucia, made from the Palomino grapes that the region is famed for. This Reserva sherry vinegar is aged for eight years in American oak barrels where it develops a distinctive flavour profile. This vinegar has a deep amber hue, a complex aroma and a rich, nuanced taste, boasting notes of caramel and nuttiness, with a characteristic tang.
Our other three offerings fall into the sherry vinegar Reserva and Gran Reserva categories. These Capirete vinegars are proudly produced by José Páez Lobato, a family business founded in 1933, located in Jerez. All these specially aged sherries are matured using the solera method where the vinegar is brought to fruition in a succession of American oak barrels, originally used for sherry wine.
We have the Capirete Pedro Ximenéz sweet sherry vinegar made with a blend of Palomino and Pedro Ximenéz grapes, sweet and smooth, with the sublime aroma of sun-ripened grapes. While the gorgeous Capirete 20-year sherry vinegar, has a deep mahogany colour with a robust concentrated flavour, and an impressively pronounced balance of sweetness and acidity. Made from sweet Palomino grapes, this is an esteemed ingredient in the culinary world, prized for its quality and versatility. Try a couple of drops with our new gazpacho soup and you will be impressed!
