Made from Palomino grapes and aged in American Oak barrels for 20 years. Perfect in vinaigrettes, marinades for game meats or chorizo and sauces.

Produced by José Páez Lobato, a family business who have been producing fine sherry vinegar for over 60 years in Jerez, southern Spain. Capirete vinegars are aged in the solera method, in which the vinegar is matured in a succession of American oak barrels that were originally used to age sherry wine. Their sherry vinegars are made from Palomino grapes, and we stock two varieties, aged for either 20 or 50 years. They have a powerful aroma with notes of vanilla, dried fruits, and wine-soaked wood. The Pedro Ximinéz sherry vinegar is made from a blend of Palomino and Pedro Ximinéz grapes. Aged for 4 years, it is sweet and smooth on the palate, with the aroma of sundried grapes.
