Selection includes:
Jamón de Cebo ~ finely sliced hind leg jamón from farm-raised 50% Iberian pork. The meat is ruby red in colour, with a good fat infiltration and veining through the meat. Estrella de Castilla 50% Iberian jamón de cebo has an intense and unmistakable aroma and wonderful flavour profile.
Salchichón ~ a salami made from coarsely-ground Spanish Ibérico pork, known for its sweet and savoury flavour profile. The salchichón undergoes curing in natural drying sheds for a minimum period of five months before being sliced.
Lomo ~ cured pork loin. This lean cut of pork is bright red in colour, with a fine marbling of fat and great flavour.
Chorizo ~ a coarsely-ground chorizo made from a selection of premium shoulder cuts of Spanish Ibérico pork cured with paprika, garlic, salt, and spices. This chorizo exemplifies the highest quality of Spanish charcuterie, crafted from Ibérico pork.
