This decadent sauce is rich, buttery and flavoured with tarragon. The classic French accompaniment to steak, it is also fabulous with salmon, eggs and steamed vegetables.
A little La Chinata smoked paprika or Giuliano Tartufi salsa tartufata are delicious additions if you would like to add extra flavour to the sauce.
