Amazing for some baking, but not all baking

This works better than any other gluten free flour I have tried for any yeast baking, like pizza bases or burger buns. Also pretty good for a quick pie crust. The flavour is very similar to regular flour.

It was absolutely the wrong flour for a sponge cake (the whipped eggs immediately deflated on contact with the flour, never seen anything like it!), or for anything that required a thin batter (crepes did not happen. It was more like pikelets. tasted good though).

I also think it might be a different density to regular flour. The recipes that used cups of flour for measurement worked out great, but ones using weight measurements seemed to have too much flour / wrong consistensy.

I was also surprised by the presence of milk powder on the ingredients list. Occasionally I bake for a friend with a severe milk allergy, and I'm glad I checked the back of the pack before using it! Maybe it can have a more prominent "contains dairy" warning, since flour is not usually something you would expect to find dairy in.

Definitely going to be a staple in my pantry, but definitely not the only gluten free flour I'm buying.

Not Dairy Free

This is the first GF flour that I've ever bought that has milk powder. I know I should have read the entire list of ingredients upon buying. I'm dairy free & my daughter is both dairy & gluten free.
Anyway I made my pancakes and I could not get the batter to thin down. I read the list of ingredients and discovered the milk. I'm sure this product is great for cakes & waffles but difficult for pancakes. The rest of the family enjoyed the flavor.

Pecan Pies

Made pecan pies tonight for dessert with Kate Fay's gluten-free flour and they were better than with ordinary flour. I've never had a lot of success making them with other gluten-free flour!

Fabulous flour!!

You know it's good when others can't tell it's gluten free! Used in my favourite chocolate cake the texture was amazing (no grit or after taste)and there was no need to add additional flours or additives to compensate for the lack of gluten.
I cannot recommend highly enough. Thank you Sabato and Kate Fay!!
