Summer Cocktails

1. Green Apple Fizz
Makes 1

15ml St Germain elderflower liqueur*
15ml Stams tart apple syrup
1 cucumber ribbon
Andreola Dirupo DOCG Prosecco

Garnish a glass with cucumber ribbon. Pour in spirits and top up with Prosecco.


2. Nod to Modena
Makes 1

10ml Giusti gold label balsamic vinegar
30ml lemon juice
30ml Wrights Chardonnay verjuice
30ml Bulldog London dry Gin*

Combine all ingredients, shake hard with ice, for 10 seconds. Double strain into a coupe glass and garnish with thyme.


3. Truffle Mary
Makes 2

1 x 280g jar Salvagno olives in brine
1 bottle Alicos Salsa Pronta di Pomodoro
1 tbsp Giusti balsamic glaze with truffle
1 tsp La Chinata hot paprika
70ml lemon juice
90ml Skyy Vodka*
Pons sweet pickled garlic , to garnish
Romulo caperberries , to garnish

Strain olives, reserving the olives and 20ml of the olive brine. Combine olive brine, Pomodoro, balsamic, paprika, lemon juice and Vodka in a small jug with ice and stir. Pour into tumblers and garnish with olives, garlic and caperberries threaded onto a toothpick.


4. Sicilian Spritz
Makes 1

10ml Alicos Sicilian orange syrup
20ml Aperol*
Andreola Dirupo DOCG Prosecco
Sparkling water
Navel orange slices, to garnish

Build in a wine glass over ice, starting with the spirit, followed by orange syrup, Prosecco and sparkling water. Add orange slices to garnish.

 

5. Chardonnay Cooler (non-alcoholic)
Makes 1

45ml Wrights Chardonnay verjuice
30ml lime juice
15ml Alain Milliat mango nectar
Sparkling water
Mint, to garnish
Fresh As pineapple slices , to garnish

Add all of the ingredients into a tall glass, add ice and stir vigorously. Top with sparkling water. Garnish with fresh mint and Fresh As pineapple slices.


6. Rosemary Bellini
Makes 1

20ml Alain Milliat white peach nectar
Andreola Dirupo DOCG Prosecco
Bruised rosemary sprig, to garnish

Pour the nectar into a flute and top with Prosecco. Swizzle the drink with the rosemary garnish.
