Quick Cook Polenta

Quick Cook Polenta

serves 6

1 litre water
2 tsp sea salt
250g Moretti quick cook polenta
3 Tbsp butter
½ cup fresh grated Parmigiano Reggiano


Bring the water and salt to the boil in a large, heavy pot.  Add the polenta in a thin stream through your fingers. Stir it with a whisk or wooden spoon as you add it. Stir vigorously for 1 minute then reduce heat to medium-low. Continue stirring for 5 minutes or so until the polenta comes away from the sides of the pan and is very thick. Add more boiling water if you want a creamier polenta. Remove polenta from the heat and stir in butter, cheese and a grating of fresh pepper if desired.
