We were just so delighted when we discovered Martinez Charcutería Auténtica products. Embodying the heart and soul of Spain, made in the heartland South Island town of Cromwell, using finest quality New Zealand pork, with traditional Spanish methods and expertise. What a combination!

Just like Sabato, this is a family venture, inspired by the recipes of Manuel Martinez, a Spanish restaurateur who hailed from Guardamar, near Alicante, southern Valenciana. Manuel handed down his family's recipes to his daughter Nadine, and her husband Vaughan, who founded Martinez in New Zealand, carrying on the tradition of producing authentic Spanish sausages, chorizo and charcuterie.

Martinez products are all about quality – no fillers, no artificial flavours, colours or additives – and definitely no shortcuts. Their fabulous chorizo extra, is slowly fermented, to give length and depth to the palette, then air-dried to intensify the complex aromas and flavours. We are also fans of their super tasty, Catalan pork sausage which is just like Barcelona’s traditional Butifara Blanca version. A coarse-grind pure pork sausage with a little ground fennel and white pepper. Try their traditionally spicy, sliced salami picante, authentic, fermented and air-dried pepperoni with smoked paprika, chilli, and pepper, or their sliced Spanish salami, naturally air-dried fennel and pepper salami - deliciously refined, subtle and aromatic.
